Always Count
That's why, even if there's less than ten seconds left in the period, I still count for the ten second violation. As already mentioned in your post, officials can also use a five second closely guarded count, a five second inbounds count (after a made basket, when the clock is running), and even a three second count, all leading to definite knowledge.
