The batter in no way slows down around the bases nor is there a play at second to get her out. How would you score this play? Is the batter creditied with a hit or is she just out?

The batter/runner is credited with all the bases she touched before being put out. In the above, she gets a double.

If the runner overslides a base, and is tagged out, she does not get credit for that base. If she overruns and is tagged out, give credit for that base.
