Because a defender could come up and intercept the pass/roll, where running alongside the rolling/bouncing ball can "protect" it from the defense. Also, it gives the thrower-in a chance to get up the court while the ball is still rolling, so you have a better chance of having all 5 on offense.

I'm not a big fan of the play, just trying to help present why it's still being done. I'm also not a big fan of some officials still wearing a belt, but I can...well, no I can't.

If the defense is far enough back to roll the ball to a certain point it's far enough back to just run up the court a little ways then receive the pass. As a player whose most effective weapons were intellect and passing I've never been a fan of rolling the ball.

Not really....you're assuming the defense is static. The defense might just retreat keeping a modest buffer and as long as they do, the offense can let it keep rolling.

Do that a couple of possessions, and pretty soon that team has saved perhaps enough time to get at least one more possession out of the game.

Of course, when I see it done in the first half, I use just as many question marks as you did.
Also it allows inbounder to get into position quicker giving another scoring option.
