The OP does not actually mention what the catcher did twice to almost ruin the umpire’s shoe/s. While these close calls could have been caused by other footwork, most of the times I've seen catchers "mess up" a plate shoe is when the catcher is adjusting his/her position before, during, or after a pitch. This is where adjusting your plate stance could come into effect.

It's kind of like telling a doctor, hey doc it hurts when I do this, and the doctor responding: well don't do that. If a catcher steps on you, adjust where you're standing.
