So all I have to do is eat right, do an hour of cardiovascular training each day and follow Ed's daily routine of lifting weights.

Can't I just move to Umpire?

We all need to be lifting weights, but it doesn't need to be as serious a routine as Ed has. Get a swiss ball and a set of dumbells from 5 lbs through 20 lbs (5/8/10/15/20, maybe 12 too). Arm curls, military presses, chest flys, shoulder flys, and such using the swiss ball as a bench or seat. Start out very light (nothing over 8 lbs) and go through 2 days of upper body (chest/triceps on day one, biceps/shoulders/back on day 2) and one day of legs (squats -- use the swiss ball between you and the wall behind your back/lunges) with one day of rest between the upper body days and legs day. Within 3 months you will see great results.
