Can you list what conferences the Elite 8 officials work for? Or how you can find it?

All of them work multiple conferences. They have a primary conference, typically, but all work in more than one....sometimes a handful.

Sweet 16 and Elite 8 officials are all eligible to be chosen for the Final 4.
