Simple FT question

The dance: On a FT, offensive center lines up, defensive center moves to his side to block him out. Offensive center switches. Defensive center switches. Rinse, repeat.

Who wins the dance? I have a vague recollection the officials tell the defender to pick his spot and then the offensive player gets to pick, but I don't know if its real or something I was just told by a ref somewhere along the line.
