In Volleyball we typically use one game ball that we inspect & set the pressure of before the match. Sometimes a school will have more than one in case a ball goes under the bleachers, get's stuck in the rafters, etc. In that case we make sure they are all in good condition, and set the pressure for all of them before the match. The game ball(s) remain at the table when not being used in play for the duration of the match.
