Example: If you're counting with your right hand, when the thrower releases the ball you stop your count and raise your right hand. When the ball is touched, you chop with your right hand. Reverse if counting with your left hand.

As for the proper chop motion, I'm not sure what the NCAA wants (I cannot find my mechanics manual at the moment). Ask your partners.
