Sometimes these situations can be anticipated. If I'm the closest official to the action and it looks like there's a held ball coming, I will take a step toward the action and be prepared to "pounce". I will give a few good, strong whistles and take a couple LARGE steps in toward the play, drop my whistle and say "OK GUYS, WE'RE DONE, I"M HERE, EASY, EASY!!!" with my hands out toward them so they see me and know they can't get away with anything further. If there is a little continuation after the play I will say "Alright fellas, easy, let's stop on the whistle now" and if need be you can take the rougher of the players aside and have a quick word.

Unless it's something agregious I wouldn't call anything above and beyond the jump but that's up to you. If it happens a couple times perhaps you want to speak to the coaches but honestly it shouldn't get to that point. Preventative officiating goes a long way.
