Just my 2 cents here, but I was recently at a match (I was not officiating) at which the Freshman match preceded the JV/V matches. When the teams split the first two sets, the coaches agreed that the 3rd would be to only 10 points, in order to keep the JV/V matches on schedule.
I think below the varsity level (since the standings don't really count for anything), there's much more flexibility given to coaches and officials to do what they feel is best for the match.
