I've never put an officiating resume together. I have heard from others that they've done it and it's been useful to them. But I would probably suggest formatting it like a regular resume and include camps you've been to, as well as conferences that you've worked for and how long. I would also probably include any significant post-season assignments that you've received and any awards that you may have received from your local association.
