To offset the cost of a 3 man crew, varsity games are scheduled on Tuesday, Friday, and Saturday nights. The girls play first at 6:00 pm, followed by the boys at 7:30 pm. Game fee is $65 per official for both games. Compare that to $40 per official for 2 man per game for 2 games. The school is only paying an additional $15 or $7.50 per game more for the extra official. This was more appealing to the schools to use 3 man mechanics.

More new math.

Old: $40 / per official per game = $40 x 4 = $160

New: $65 per official / per two games = $65 x 3 = $195.

Difference = $35.

That said, I agree with your conclusion. I'd just be careful about how it's explained because someone is sure to not listen to your argument if your math is incorrect.

Also, do you find that soem officials are objecting to working two games? Do younger officials view this as an opportunity or a set back (3 officials needed to cover the two games versus 4 under the old system)? Do "boys" officials object to working "girls" games (and vice-versa)? Does this affect the recruitment of female officials?
