The question came up if "defense" while the ball is loose in the end zone "batts" the ball out of the end zone--is it a 1 point still for "a".

My thoughts it's still a 1 point safety becuase of the ball being forced into the endzone by the "defense", and the batting is illegal.
Defensive fouls are always enforced from the basic spot. Basic spot is the end of the run. Half the distance and re-try if the penalty is accepted.
