I'm relatively new to officiating (starting my third year).
Last year, the coaches kept saying "hey, Blue." and "Blue, blah, blah, blah" At first, I ignored it because I felt it wasn't offensive nor directed at me. After a while one coached came around to face me (I was working sideline with my back to him) and seemed upset that I wasn't responding to him. After his question was asked and answered, I asked the other officials what "Blue" was and why I was called such. They told me it was a baseball term used on umpires and such (because of their blue uniforms I gather).

If coaches can't tell stripes from solid blue when it's right in their line of sight, how can they see a block in the back through 20 or so players a football field away? Just a little curious about this one.

You're right on both counts, "Blue" has been around forever, even in football, and coaches can't see a block from the sideline!
