What I do not understand about that article is how you can get so much time off as a utility worker and still do a full schedule of games?

Ed was my first Frosh/JV assignor in the NYC Catholic Schools. He's had the job ever since I can remember (I started with them in the '90-91 school year) so he has lots of time available. Between that, switching with people and just taking unpaid time off, it's doable. Remember, what he gets for a D-1 game will more than make up what he loses for a day at the job.
