Once the "Home" team is determined, by whatever means, that team customarily chooses a dugout. That is part of the "Home field advantage", just as getting to bat last is.

Depending on sun exposure, that can be very significant.

True "home" teams may also have something like an equipment locker in "their" dugout. In a "neutral site" game or tournament, I've seen the expedience of preassigning teams.

Locally this year, due to some field construction and availability issues, we had a number of situations where the true home team was the designated visitor, for purposes providing equal number of "home" games to all teams. On a couple of fields where 1 dugout directly faced the sun on hot days, this was not a trivial matter.
