Tags add context to threads and adds another method users can search for relevant threads.
For example, you might add a few tags to a great thread about game management so it will show up in more searches. The tags would look like "game management", "angry coaches", "technical fouls", "ejections" etc. Any time another use does a tag search on any of those terms, that thread will display.
