I wear the Windstopper shirt under my jersey. Honig's has them. They are windproof, and nearly water proof. The Windstopper material will stick to your skin, so wear a t-shirt under it. Layering on top with turtleneck, sweater on those extra cold days/nights will help also. A friend of mine who skis regularly said I should wear silk underwear, which is sold at ski outlets everywhere. Apparently silk is great in cold, wet weather.
The trick in really cold weather is not to overdress, then perspire. Any moisture in your clothing will make you colder. Keep extra gear for halftime changes if necessary.
