Viva, Las Vegas?!
The announcers said it was a rule requirement. Might have to do with point spread, fantasy football, playoff tie-breakers, seedings, or something else not directly related to THIS game, or even THIS season. Our high school rules provide for NOT playing the try when "the point(s) would not affect the outcome of the game or playoff qualifying. NFL rules may not have such an exception and are probably similar to college. The NCAA rule states that "the try is mandatory unless the team behind in the score leaves the field of play." The Vikings didn't leave.
Just guessing ...
