When doing a game with one ref and two line judges, where should they be placed?

The same place as if there was a 1R and 2R.

There should be one to the 1R's right and the other is on the opposite corner. Which would be the 2R's right (see where this is going....)

I think this is more out of tradition than necessity. Until a few years ago you had to serve in a 10 foot (give or take) area on the right side of your court. By placing the line judges to the officials right hand side, they would be opposite the serving area, thus eliminating any potential to distract the server.
