In co-ed, is there a limit to how many men can play in the outfield?

You would need to tell us what rules you are playing under. Mike has given you the correct answer for ASA rules, but ASA is only one of many different softball organizations.

To further confuse things, any league is free to adopt any rule changes it chooses.

For instance, my local league plays under NSA rules which require two of each sex in the outfield, two of each on the infield and a male/female pitcher/catcher combination. However, the league has waived this rule and allows any combination of male/female defensive alignment (still must have five of each in the field, or five and four if playing short-handed).

We would really need to know what rules you are using to give a definitive answer.

In the case of USSSA, there's no limit. You can have an all-female infield and an all-male outfield. I've seen some good coed teams do that. I've had some opposing managers gripe, and I tell them, perfectly legal.
