Hi,
I know the height of the strike zone (roughly between the cap and the bottom of the shoulder), but I am not sure for the depth. Is the strike zone a volume, in three dimensions, above the whole home plate, or simply the entrance of the home plate, (and so only 2 dimensions) ?

3 dimensions. If the ball passes over ANY part of the plate (front or back, left or right) at the proper height (top or bottom), it's a strike.

That's one heck of a high, but short zone! Is that from the bill of the cap or the top of the cap?
