Using the flipping coin app on your iPhone is not a good idea.

Why not? I would think that it would operate well enough.

(However, the last time I heard, the random number generator in technology wasn't completely random.)

Because when you put your iphone back in your pocket, you have to contend with players who might run into you during the game breaking your iphone. Not so much of a problem with a flat metal disc.
And the screens on those things are a bear to read in daylight.
Randomness isn't so much of an issue for this application. It's not like the visitor captain has thousands of toss opportunities to see where the random seed is.
