I have my tailor contour the shirt to my body, leaving a little room for movement. The problem is that after it is tailored (for me anyway) the opening at the bottom is much smaller than my shoulders and it can be difficult to put on.
Also, if you are very lean, a tailored shirt may enhance this look (waif-like), rather than the look you are hoping for. If you have a "V" shape (larger shoulders, smaller waist), you should get good results. I have been very happy with the "tailored look" of my shirts without the excess fabric blowing in the wind.
